This week I am going to share a recipe for Cajun Pasta. This dish is very flavorfull and easy to prepare. I have added shrimp to this dish since we don't eat meat during Lent. You can substitute with fully cooked chicken, or just have the pasta with the sauce.
In a large pot boil a pasta of your choice until all dente. Drain and set aside.
Melt 1/4 cup butter in a skillet over medium heat. Saute 1 pound shrimp for one minute on each side. Add 1 Tablespoon minced garlic and cook for one to two minutes more. Do not allow garlic to burn. Remove shrimp from skillet and set aside.
Still 1/4 cup flour and 1 Tablespoon Cajun* seasoning into skillet. Add more or less seasoning depending on how spicy you like your food. Cook and stir for three minutes. Lower temperature to medium love and whisk in 2 cups of milk. Cook until thickened.
Remove from heat and add shrimp to sauce. Combine with pasta and toss gently to coat.
*Cajun seasoning can be bought or made easily at home. Combine equal amounts of salt, oregano, paprika, cayenne pepper, and black pepper. Mix well. Store extra spice mix in an air tight container.
