Today I am going to share an easy recipe for Chilaquiles. Michael and I love this dish and make it every Sunday while the kids are at Sunday School classes.
First your going to want to blend a can of tomatillos and an onion in the blender until smooth.
Pour about two cups of the mixture into a large skillet and simmer over medium heat for about 10 minutes. We usually roast a pepper or two in the skillet before adding the green sauce, but this is completely optional as some folks don't like the extra heat the peppers add to the dish.
Add tortilla chips to the skillet and stir until the chips begin to soften.
When the chips begin to soften, crack a couple eggs into the mixture and add Mexican or Feta cheese. Stir until the eggs are firm.
I usually serve with extra tortilla chips or beans.
