I am linking up over a Home to 4 Kiddos to share new recipes on Tuesdays. I don't know about you, but the blah weather and winter routines of February really begin to wear me down. Trying something new and fun in the kitchen is a good way to lift your spirits.
This week I am sharing a quick and delicious tomato soup recipe. My kids adore this soup and often ask for it with grilled cheese or melted cheese tortillas.
Saute in a large pot:
1 medium onion
1/2 Tsp Paprika
1/2 Tsp Dried Basil
1/4 Tsp Garlic powder
When the onion is soft but not brown add:
1 and 1/4 cup milk
2 cans diced tomatoes
2 can tomato soup.
Simmer on low for 15 minutes.
Now my kids don't like chunky soup, so I pour the soup into the food processor and then heat again for a few minutes.
Right before serving, cut an 8 ounce block of cream cheese into chunks. Add to the pot and allow the cheese to get slightly melted. Spoon soup into warmed bowls and enjoy!
